The aroma was heaven. Comforting and a little sweet as I entered my friend’s place. I was ushered inside and was unexpectedly greeted with a piping hot waffle, topped with berries, butter and a touch of maple syrup. I could get used to this kind of treatment real fast!
This lil sweet grain and gluten free waffle recipe is from my dear friend Trisha who can often be found in her kitchen experimenting and adapting various recipes, including mine!
Belgian Waffle-Makes 2
3 eggs – separated
½ cup kefir or thinned plain yogurt or non-dairy substitute*
1 ½ teaspoons baking powder
½ teaspoon vanilla
1 cup almond flour
¼ teaspoon salt
2 Tablespoons butter melted
Beat the egg yolks until light.
Add cooled melted butter, Kefir, Vanilla.
Blend almond flour, Baking Powder, Salt. Slowly add the egg yolk mixture.
Beat the egg whites until stiff and gently fold into the batter.
Bake and serve on a warm plate with warm Organic Maple Syrup and fresh Berries.
Makes two waffles
* Non-dairy substitute for kefir or yogurt. Use 1/2 cup coconut cream with 1/2 Tablespoon lemon
