This dish  makes a simple and elegant Paleo summertime appetizer or dessert and it whips up in no time.

Grilled Thyme Grapes:

(serves 4)

1 pound organic red grapes

1/3 cup olive oil

3 Tablespoons balsamic vinegar

1 tsp. fresh thyme

1 clove garlic crushed

Pinch of Real Salt

6 oz fresh mozzarella (optional)

Wash grapes and allow to dry

In a medium mixing bowl combine olive oil, vinegar, thyme, garlic and salt and whisk together.  Add grapes {attached to the stems) and toss lightly until coated.  Let sit for 15 minutes or more.

Turn grill on to medium heat

Using tongs, place the grapes on the center of a hot grill.  Grill for 30 seconds. Turn and grill for another 30 seconds.

Return grapes to marinade to cool for 12 minutes. You can remove the grapes from the stem after they cool.

Enjoy just as they are or serve with the soft fresh mozzarella cheese.

Let me know how these turned out for you!

Happy 4th!
