Pomegranate Spinach Salad

Serves 2-3

4-5 cups organic spinach leaves

1/3 cup pomegranate seeds

2 ounces goat cheese-crumbled (it’s easier to crumble the colder the cheese is)

1/2 red onion, thinly sliced and cut into 1 inch pieces

1 Avocado-cubed

2 Tablespoons Olive oil

3-4 Tablespoons Balsamic Vinegar

Cracked pepper

 

Combine all the ingredients, toss and enjoy!!  It’s that easy and you will crave this salad with its creamy textures and tart and pungent flavors.

P.S. don’t sweat it if you can’t find ripe avocados.  Substitute with 1 cup raw almonds or just let it be.
