10 Minute Tomato Bone Broth Soup

1/2 yellow onion chopped
2 cloves garlic chopped
1 1/2 Tbs butter
1 14 oz organic fire roasted crushed tomato
2 cups bone broth (I use Bonafide)
1 cup fresh basil
1 tsp fresh thyme
Pinch red pepper
1 tsp salt
1/4 tsp pepper
In a large sauté pan melt the butter. Add the onion and garlic and sauté, about 5-8 minutes.
Add the fresh thyme, basil, and crushed tomatoes. Stir until fragrant. Add the bone broth, and red pepper. Bring to a boil then simmer for 10 minutes.
Take off the stove and stir in the salt and pepper.
Use a vitamix or immersion blender and pulse to desired consistency.
Drizzle some good olive oil to finish it off or top with a clump of fresh goat cheese.
