It’s no secret that it’s cold and flu season again and that means it’s time to nutrient up and boost the immune system. This Tomato Soup recipe is a quick and delicious way to nourish, heal and restore your gut health and immunity! While the main ingredient is bone broth, the fresh basil, a touch of pepper flakes, and thyme all work to boost the immune system.
Bone broth has gained popularity in the past few years and for good reason. The properties in this magic elixir are culpable for why your grandmother’s chicken soup always seemed to be the magic cure.
Bone broth contains 19 healing amino acids that are easily absorbed by the body to fight inflammation and heal the gut. It keeps us hydrated and actually clears mucus and opens respiratory pathways.
The best part about it is you don’t have to make it, if your short on time. Taking a tip out of Barefoot Contessa’s recipe box, ‘why make everything when you can easily buy good ingredients.’ I like Bonafide bone broth but there are many more out there at your fingertips at Thrive Market.com
So ward off the sniffles with this immune boosting soup. It’s delicious, healing and best of all QUICK! …. now how easy is that?
10 Minute Tomato Bone Broth Soup
By: The Wellness Contessa
1/2 yellow onion chopped
2 cloves garlic chopped
1 1/2 Tbs butter
1 14 oz organic fire roasted crushed tomato
2 cups bone broth (I use Bonafide)
1 cup fresh basil
1 tsp fresh thyme
Pinch red pepper
1 tsp salt
1/4 tsp pepper
In a large sauté pan melt the butter. Add the onion and garlic and sauté, about 5-8 minutes.
Add the fresh thyme, basil, and crushed tomatoes. Stir until fragrant. Add the bone broth, and red pepper. Bring to a boil then simmer for 10 minutes.
Take off the stove and stir in the salt and pepper.
Use a vitamix or immersion blender and pulse to desired consistency.
Drizzle some good olive oil to finish it off or top with a clump of fresh goat cheese.
