Easy Peasy Raw Chocolate Pudding

When I came across this easy recipe, I was really excited to try it out! And I was not disappointed!

Most raw puddings contain coconut and avocado to create a creamy base and this one is no exception.  But what makes this recipe different, is that it doesn’t require the somewhat laborious opening and harvesting  of the coconut meat from the whole coconut. Things have been simplified by calling for coconut milk instead.

That means that this amazing treat can be whipped up in just 5-10 minutes. It’s great for a snack, dessert, or even breakfast- yep, breakfast.  And here’s why: the avocado, almond butter, coconut milk, and spinach (aka lots of good fats and fiber) makes this a winner in terms of keeping blood sugar levels even and offering satiety for hours.

The best part about eating this treat is knowing that you’re supplying your body and brain with good fats and greens while getting your chocolate fix.

This is a perfect example of using food to support and heal the body.  Enjoy!

Serves 4

Ingredients:

• 1/4 cup almond butter *
• 1/2 cup maple syrup
• 30 drops liquid stevia**
• 1 1/4 cup coconut cream or milk
• 2/3 cup organic cocoa or cacao powder
• 1/4 tps. Real SaltTM
• 2 medium avocados
• 2 handfuls organic spinach
• 1 Tbsp vanilla

Directions:

Throw all ingredients into a food processor and process until smooth.
It takes less than 2-3 minutes to prepare!

*The almond butter is optional. It makes the pudding richer adding more fat and lil more protein.

**or use an additional 2 Tbsp maple syrup
