This Chocolate Pudding is great for a snack, dessert, or even breakfast- yep, breakfast. And here’s why: the avocado, almond butter, coconut milk, bring good fats and fiber — spinach supplies fiber and calcium — collagen powder add in collagen and protein. The last two ingredients, in particular, are bone promoting. This is also perfect in terms of keeping blood sugar levels even and offering satiety for hours.
The best part about eating this treat is knowing you’re supplying your body and brain with good fats and greens while getting your chocolate fix.

Serves 3-6 (snack portions)
Ingredients:
2 Tbsp. nut butter
1/4 cup maple syrup
20 drops liquid stevia**
3/4 cup coconut cream or milk
2 Tbsp. Collagen Powder
1/3 cup organic cocoa or cacao powder
Pinch Real Salt
1 large avocado
1 handful organic spinach
2 tsp. vanilla extract
Directions:
Throw all ingredients into a food processor and process until smooth.
It takes less than 5 minutes to prepare! Pour into 3-6 ramekins and refrigerate for at least 1 hour.
Garnish w/ chopped salted pistachios and a twist of coarsely ground sea salt. (I think this garnish makes the pudding just pop!)
